To unlock the option to choose 250cc bike Class, get to the final level in Career Mode and acquire First place. You will now be able to choose between 125cc and 250cc in any game mode.

After beating the game when you're able to choose 250cc in freestyle, go to the vulture canyon level and ride to those big rocks by the wreck 4-wheeler, continue straight on out from the 4-wheeler to the really tall rock with a dirt mound infront of it, try to get your speed to about 61-61mph and just as your going up the mound, pull the right trigger. If you successfully make it up the rock, there will be a brunette in a white bikini sitting in a pool of water on top the rock.
